A Day to Remember

Friday April 29th, 2011, truly a day to remember, Prince William and Katie Middleton wed today. What a glorious event. This would be a day to say that for a few hours the world’s tragedy and pain, was set aside to celebrate the Royal Wedding. Over 2 billion people worldwide, watched as the Royal Family celebrated, the wedding of future King of England. Truly magical. I slept on the couch last night, with the TV on, so I could watch with one eye open and one eye closed!! 🙂 However, the Sandman attacked as the Priest uttered the words, Dearly Beloved we are gathered here today, last thing I saw or heard until they were leaving Westminster Abbey and heading back to the Buckingham Palace. Thank God for PVR!! What a glorious day!! 

I spent the next part of the day with my dear friend Donna, we enjoyed a child-free coffee visit, and then hit the road to do a little work in London for her and some for my Mom. Then we delighted in a completely FAT FREE/GUILT FREE girlfriends type lunch!!! Ohhhh it was good!! 🙂 We had lunch at the Palasad in London.

Pizza Dip – marinara tomato sauce with herbed ricotta cheese, diced pepperoni topped with fresh basil served with garlic bread sticks. (SO FRESH and LIGHT YUM YUM YUMMY)

Grilled Chicken Club – pancetta bacon and grilled chicken, topped with spinach, Roma tomatoes and sun-dried tomato aioli  on a soft cibatta loaf with sweet potato fries

The Atomico (wood fired pizza) – oven roasted portabello and cremini mushrooms, green onions, on a oil infused herbed sauce, with mozzarella cheese and Parmesan cheese. 

So incredibly lovely was lunch …. but HOLY full batman!! LOL 🙂 

I’m off to enjoy my bedtime coffee …. a day to remember … continued tomorrow 🙂
